A few weeks ago we went to the Cowboy Symposium in Ruidoso, NM. It was really fun and we got to see lots of authentic chuckwagons and eat some food, which was the ever popular food of the south, "Chicken Fried Steak." My favorite thing we ate though was the dessert, peach cobbler. It was made in a dutch oven outside in a fire. I'm interested in learning how to cook that way, I think it would be fun. Even the biscuits were made in a dutch oven cooked over a fire. They were so light and fluffy, amazing. It was an extremely windy day so sand was blowing everywhere. We all figured that just made it more authentic to eat food with dirt in it, just like the cowboys of old. We got to listen to cowboy poetry, lots of singing and guitar and fiddlers playing. It was very interesting hearing talks on the clothing of the time period also. The kids participated in the kids rodeo and did barrel racing on a stick horse. It was great. We camped in a very nice campground that thankfully had showers to wash all the grime off from the windy day.
